Answers to Australia Day quiz and what the hell do you do with kale?

I know, I know. I don't blog for almost a month and then you get two posts in (technically) one day. I am nothing if not inconsistent.

It's just that when I woke up this morning I checked the calendar Facebook and realized it was Australia Day. Which reminded me that last year I ran an Australia Day quiz because I wanted to see how the quiz feature in google docs worked. An then I never gave you the answers. Which reminded me I hadn't logged onto google docs in exactly a year.

So, while I'm trying to figure out how to get back into google docs, let me share something with you.

Yesterday I read a book on the health benefits of whole foods and was so inspired that I went directly to the grocery store to buy a bunch of leafy green vegetable matter. I came home with, among other things, a huge bunch of kale. Really huge. It takes up half a shelf in my refrigerator.

My fit of inspiration continued. I made carrot soup to freeze, then fed the kids broccoli and fruit for dinner. I ground flax seeds. I made a spinach salad for lunch today.  I put almond milk in my coffee. I am practically brimming with phytochemicals.

But back to the kale.  I realized I don't have the slightest idea what to do with it.

I open the fridge and look at it and it looks back at me. I close the door, but the next time I open it, the kale is still there.


Please, if you have any kale suggestions, share them with me. I'm losing the staring contest.

Anyway, back to the quiz.

So, seriously. what to I do with the kale?

It scares me...


  1. Kale is my favorite food. We are passionate about it in our family. hehe. The best is to wilt it in a few tablespoons of water and then sautee with olive oil, garlic and salt. Add some kidney beans and you're done. It is my 4 y/o's favorite meal!

    Also, you can rip it up, drizzle it with olive oil, spread it on a cooking sheet and sprinkle with salt. Roast it at a low temperature for about 15 minutes and you'll have crispy kale chips. So yummy!

  2. Amanda, I am beyond impressed that your 4-yr-old eats sauteed kale. Can I ship you my son for a month so you can learn him?

    Someone else suggested kale chips. I may give that a go!

  3. kale chips ARE supposed to be very nice. another use - juice it together with a bunch of other greens = super juice! kale is one THE most healthiest things in the world for you, it's a SUPER food!

  4. The only thing I know to do with kale is pop it in a green smoothie.

  5. Kale is a fairly recent discovery in this house, too. Google it, which you've probably done by now. There are so many easy, tasty recipes out there. I've even mixed it with pasta dishes for a nutrition boost.

  7. Kale Chips

    Ingredients: Kale (1 bunch, organic is best), olive oil (3 tablespoons), nutritional yeast (1/4 cup) , sea salt (to taste)

    Instructions and Preparation:

    1. cut out the stems of a bunch of kale.

    2. break up the kale into kale chip sized pieces and put in a large bowl.

    3. pour roughly 3 tablespoons of olive oil on the kale and massage it in

    4. sprinkle in approx. 1/4 cup or more of nutritional yeast .

    5. salt to taste

    Bake them for 15 mins. at 350 degrees F.

    What is nutritional yeast?

    Nutritional yeast is commonly used to give a healthy version of a “cheesy” nutty flavor to recipes. You can even make popcorn with coconut oil and top it
    with nutritional yeast. It is delicious! The health benefits of nutritional yeast are wonderful. It is a complete protein and contains many B vitamins. It is gluten-free & dairy-free!

  8. I heard you can make Kale chips and I heard someone made a Kale smoothie, although I assume it will be green and I am not so sure about that.

    I did find a kale chip recipe on the internet, but @Annabellz's sounds better. I'm now intrigued about nutritional yeast.

  10. @Stinkbomb - I'm curious about adding greens like kale to smoothies. We are big smoothie fans in our house.

    And if I ever get my bod back into bikini shape I promise I'll strike a pose in that suit just to embarrass because you said that!

  13. have been meaning to try kale chips for ages ... could they really be healthy with the oil and salt though? wish I looked that good in a bikini.

    Usually we fry some small pieces of speck, toss in some cubes of fennel and cook for a few minutes, add white wine and cook covered for another few minutes, chuck in some chopped kale, season with salt and pepper and cook until kale is wilted. Lovely side dish with steak or pork chops.

  15. I bought a Kale once from the boutique fruit/flower shop in the village. It was so pretty and purpley. I put water in a crystal bowl, tinted it purple with food colouring and put the Kale in it. Then I sat the bowl in the middle of the table for a luncheon I was having.

    Well.... I didn't know it was a vegetable and not a flower! Till my girlfriends arrived and fell over laughing.

    I'm too old for this shit! the Shit being these designer vegies I never saw in my greek-australian childhood.

    Kale and potato soup sounds nice, Rachel. Eager to try out all these recipes. I made a green smoothie this morning and it was nice.

    @MIA - I've seen versions using herbs instead of salt and only a bit of olive oil. Haven't tried the chips yet so don't know how it would come out.

  17. I've never tried the chips but I do know oil is healthy salt in moderation... Got the recipe from a vegan friend... Just recently so I thought I'd share. I've only used kale in stirfry don't recommend it.

  18. If I can get my kids to eat them I will be thrilled. Even with salt, it beats what they generally snack on by a mile.

  19. I generally wash and de-vein the kale (stems and bigger veins can be kinda woody) and tear it into largish bite sized pieces. Then heat some olive oil in my biggest saute pan and add garlic. Once the garlic is sizzeling and the oil has been moved around the pan to coat it, I toss the kale in and cram the lid on to let it wilt. As it cooks the volume gets smaller, and I use tongs to turn the kale and help it soak up all that garlicy goodness. I cook till tender but try not to overcook. It reaches this point where it's tender but still has a bright green color. Once it gets here you want to immediately take it off the heat, because it's easy to over cook and it looses color. That's pretty much it.

  20. Oh, yeah, probably a good idea to add a little salt and pepper while it cooks, just to taste. Or garlic salt, or seasoned salt, you get the idea.

  21. My husband likes kale. I hate it. Good for compost and little else as far as I am concerned!

  25. @Melissa - lol. I made a green smoothie (good, but looks funny) and threw a bunch in a pot of lentils (okay, but overcooked). Will try sauteeing with garlic and see how I like it.

  26. Oh, and the kids haven't tried it yet. I'm thinking of making a green smoothie at home, throwing kale in when they're not looking and telling them it's a kiwi shake!
